Introducing Spade and Clover + Citrus Arugula Salad with Radish and Citrus Supremes

Kiawah River Farm welcomes Spade and Clover, located at the neighborhood’s entrance. They specialize in farming fruits and vegetables that grow well in the Lowcountry’s subtropical environment. Including vine ripe tomatoes for tomato pie, cucumbers for marinated salads, kale for smoothies, to more exotic plants such as turmeric, ginger and galangal. Spade and Clover cultivate using a sustainable method called cover cropping, which returns valuable nutrients to the soil. They value growing with little negative environmental impact.   

Spade and Clover’s produce is included in Kiawah River Farm’s CSA. Delivered every week, residents can sign up to receive a variety of seasonal produce and goods.   

When you receive your greens, try making Citrus Arugula Salad with Radish and Citrus Supremes, a recipe adapted by Chef Ryan Sullivan, Harvest Catering  

Ingredients

4 cups baby Arugula, Kale, or Mesclun Greens  

Citrus segments from – (reserve the juice)  

1 lemon  

1 blood orange  

1 red grapefruit  

4-5 squash blossoms  

4 watermelon radish (or red) thinly sliced  

 Vinaigrette  

1 shallot thinly sliced  

1 TBS red wine vinegar   

2-3 TBS EVOO  

reserved citrus juices   

Instructions:

Mix citrus juices, red wine vinegar and shallot together. Whisk in EVOO until emulsified.  

Toss with salad ingredients and season with salt and pepper.
