Southern Palate: Diving Into a Dunlin Signature Dish With Chef Michael DeCicco

Southern cuisine is a story told through generations, shaped by people, places, and traditions. From time-honored techniques to recipes passed down around kitchen tables, the greatest Southern dishes have a way of feeling nostalgic, even with a modern flair.

Located within the Kiawah River community, The Dunlin, Auberge Collection places destination dining, restorative wellness, and gracious hospitality just a golf-cart ride from residents’ homes. At Linnette’s, Chef Michael DeCicco brings his own perspective to a Southern classic: Joyce Farms Buttermilk Fried Chicken.

The creamy tang of buttermilk, the savory richness of the cheddar-thyme biscuit, a touch of sweetness and zing from hot honey and a fresh napa cabbage slaw come together for a dish that is both comforting and delightful.

“Fried chicken is deeply symbolic of the American South, and our version respects the classic flavors and traditions that make it so special,” says Michael DeCicco, Executive Chef at The Dunlin, Auberge Collection.  “We honey-lemon brine the chicken, dip it in buttermilk, and coat it in seasoned flour before frying it until it’s perfectly crisp. You can take it sweet or savory with hot honey or ranch, although my personal favorite is using both sauces together. We use Joyce Farms chicken, which is our go-to here in the Carolinas, and serve it alongside biscuits and a bright, vinegary slaw to complete the dish. We’re really looking forward to serving it up from our new food truck!”

Linnette’s invites guests to settle in and let the flavors of the Lowcountry unfold around them. Whether you’re visiting The Dunlin for a special celebration, a returning guest, or simply in search of your next favorite Southern dish, Chef DeCicco’s Joyce Farms Buttermilk Fried Chicken is one to add to your list.

For Kiawah River residents, experiences like Linnette’s are part of everyday life. From an impromptu dinner to a special celebration, The Dunlin offers the ease and service of an Auberge resort within the community—and just moments from home.
